Finally! I am sitting down to share this amazing recipe with you! It is delicious, easy, full of chocolate and peanut butter goodness! A few of the ingredient might be “specialty” ingredients if you aren’t currently using alternatives for sugar. I’ll share some links from Amazon to my favorite sugar replacement that is zero on the glycemic index! You can use what you have, but by replacing the sugar they make these more of a fat loss friendly recipe.If you follow me on social media, you’ve been seeing my photos of these:And we all say, “Yum!” This recipe makes about 12, and I’ve learned to double it because well.. I have a husband who also loves chocolate and peanut butter! On to the recipe!
Delicious Chocolate Peanut Butter Cookies
Preheat oven to 350 while you mix these ingredients together:
1c. peanut butter
1/3c. cocoa (THIS is my favorite, but you can use what you like!)
1 scoop Mom Fuel protein powder Vanilla or Dutch Chocolate
1/2t. baking soda
Stir all of that together then add:
1/3c. Monk fruit + 1c. hot water
I put the 1/3c monk fruit into my measuring cup and then fill it up to the 1c. line with hot water. I do this to dissolve the monk fruit, and to add liquid to the rest of the batter. Mix all of that up real well, but also not too much. It won’t look like a traditional cookie dough recipe.
***If you double the recipe, use 2/3c monk fruit, and then fill your measuring cup to the 1 3/4c line. If you use the whole 2 cups of water, they will be very liquid-y.***
Add in 1/4c chocolate chips and 1/2c peanut butter chips. Scoop cookies out with an ICE CREAM scoop! Yes, they will be HUGE! I pat mine down just a little bit. Bake for 10 minutes. Let them cool before trying to get them off the pan. I use my silicone baking mat, or you could use parchment paper. Enjoy!!!
